The author and famous chef, Jiang Zhensheng, shared his life experience in his recent book.

I could never have imagined that Jiang Zhensheng, who lived in Taiwan at the time, spoke French, and especially havd the courage to work in a French Michelin restaurant in Taiwan. Over time, however, he was able to complete this difficult challenge. In the beginning, he didn’t know much about France, especially the inner workings of a three-start French restaurant in Taiwan where every great chef wanted to work. There was no one there to team him French, but Jiang Zhensheng came to realize that the more he worked hard at it, the more he was able to strive and achieve this goal of being able to learn and speak fluent French.

In order to learn French, Jiang Zhensheng first had to write what he heard in French, translated into English, then ask a French speaker to then translate it back correctly for him into French, with correct French grammar. Over time, this process became less necessary as Jiang Zhensheng began to speak French increasingly and more fluently.

In his first 2 years working in a 3 star Michelin kitchen, his job was only to cook the potatoes and clean up. During his apprenticeship, he had little money and was paid a low salary. To save money while working at the Michelin restaurant, he had a roommate/co-worker that he lived with in a warehouse loft.

Jiang Zhensheng explored the different French cuisine and tastes by sampling the recipes he could, to acquire the French flavours and traditions of preparing an authentic French meal. He recorded the details diligently and absorbed the different flavours and tastes like a sponge. Through perseverance and determination, his hard work and attention to detail allowed him to become the youngest chef of all French cuisine in Taiwan. Not forgetting to mention, he also became one of the top 150 chefs in the World!

I can understand that it is sometimes difficult to embrace new habits, ideas and traditions, while letting go of the ones we’ve been accustomed to over our lives; but letting go is essential to increase our potential, especially when we travel to foreign countries, learn new things, or do new jobs.

Jiang Zhensheng also stressed the original reason why he wrote his book was to help us answer our own questions as to why we want to do what we like. For example, why do I want to go to school? Why do I want to do this particular career? Why do I want to study so much? Through his book and his life journey, he helped us realize that self-motivation is the root of all our whys and who we ultimately become today and tomorrow.

初心也是初衷的意思

其實我有「初心」這本書很久了,但以前的我非常不愛閱讀也沒耐心看這麼多字

即使別人送我的書我也會放在書櫃上讓它慢慢長灰塵.....

直到某天突然開竅還是不小心撞到頭之類的,就愛上了閱讀

作者江振誠在20歲時,就成為了台灣史上最年輕的法國料理主廚

當然也有過對人生迷惘的時候,但我個人也覺得他很幸運的在非常年輕時就發掘自己的興趣

他每天刻意輪兩班,工作長達十幾小時,只為了能學習正統法式料理和甜點

當法國三星級最年輕的雙胞胎主廚受邀來到台灣的西華飯店擔任客座主廚時

作者被指派擔任這兩位雙胞胎主廚的助理

也因為平常作者的堅持與努力

讓雙胞胎主廚發掘了作者的潛力,邀請他到法國三星餐廳工作

事實上,作者完全不懂法文

我佩服作者一句法文都不會就直接前往法國

在隨時處於備戰狀態的廚房裡,根本沒人有空教你法文

且以現實面來說: 在這個米其林三星餐廳神聖的殿堂裡,大家當然都想爭取當主廚的位置,

教會你越多東西,你就越有競爭力

因此作者就用了土法煉鋼的方式學習法文

他先用英文大略拼出聽到的法文,之後再問朋友這句話的意思,

修正成正確的法文,一字一句學習與記憶

完全讓人感覺出

若你真的想要達成某目標,你就會盡可能克服困難

雖然在國外學習語言當然有幫助,但為自己"創造"學習語言的機會更有幫助

懂得為自己"創造"任何可以學習的機會

專注在自己擁有的,別去專注在自己所沒有的

我想這也是為了達成目標的不二法則

多問問自己,我擁有什麼?我可以為自己創造什麼?我該如何達成?

也很難想像作者在當學徒時的薪水超少、甚至沒薪水時,是如何在物價很高的歐洲過生活

作者以有限的資金來計畫著每分錢的用途,目標不是存錢而是將錢投資在自己身上

作者與一位日本同事住在倉庫裡、甚至吃餐廳的淘汰品果腹

把存到一點點的錢拿去吃米其林餐廳吃(據作者表示,當時一客餐點少說要兩三百歐)

不是為了犒賞自己,而是為了品嚐什麼樣的料理、什麼樣的味道才是最棒也最道地,並記錄下來

不會主觀的評斷喜不喜歡這道菜,而是對於料理像學問一樣在探討和挖掘

與其把錢存在利率低到不行的銀行,不如把錢投資在自己身上,比較實在.....哈哈哈

隨著社會不斷的進化與變遷,出國這件事情變得很容易

但其實到哪裡都一樣,尤其是出國,把既有的觀念清空,讓自己變成海綿一樣吸收新知

雖然許多事情已是根深蒂固的,但用心學習與觀察,會讓你有更多不同角度思考事情

喜歡作者說的一句話: 跳脫框架思考,如果不站在框架裡,所有事情都是跳脫框架

有時跟隨著既有的規則與框架行事,反而會被困住

確實我也認為台灣的教育還有非常大的進步空間

以目前的教育來說,我們被訓練得墨守成規

按著社會賦予你的軌道行走,漸漸的會讓人變得不會思考也不認識自己,這是很可惜的

作者也提到,學習要有計畫,有了大目標後,開始細項規劃內容、時間、方法等

就像書本「SLASH♥斜槓青年」的作者一樣,分享了自己每日的晨間計畫,一步一腳印得完成自己的目標

這兩本書的作者提到自己達成目標方式不謀而合

咩咩羊確實開始執行每日、每周與每月的計畫

每當完成一項計畫就特別有成就感

確實寫下來後,真的超有方向感!! 你們也跟我一樣嗎?

其實不管怎樣,我們需要多思考

為什麼要學料理?食物對我來說重要的意義又是什麼?

為什麼要上學?學校對我的意義是什麼?

為什麼我要選擇這份工作?這份工作對我來說是什麼?

為什麼選這個科系?我想從中學到什麼?

進步的動力來自於自己真正渴望的事情

也像作者說的:

當對一件事情有熱情時,就能超越所有的苦,如果對一件事沒感覺,就會經常感到辛苦

因為對你來說就只是一份工作

每一個挫折、每一份煎熬,都只是一個你正在習慣的過程
